Ayarza, a unique region known for its dramatic landscape and cold blue waters of Laguna de Ayarza and Laguna Azul, was formed by two massive volcanoes that collapsed, creating a large crater. The area is rich with legends, including one about the lake’s mysterious bottom. It also has immense potential for specialty coffee, though the early cups were decent but unremarkable.
Four years ago, Covoya Guatemala rented a wet mill at 1,500 meters on a certified farm. The washed coffee produced was better than expected, so they experimented with honey and maceration processes.
For natural coffees under the Blue Ayarza mark, the best cherries from small farmers are delivered to the mill, often by their own trucks. The cherries are dried in Amatitlan for 10 days on patios, then mechanically dried for 5-10 hours to finish
