This single-variety Pacamara comes from carefully selected harvests by smallholder farmers in the South of Huila, Colombia. Known for its large, expressive beans, Pacamara thrives in Huila’s high-altitude microclimates, producing a coffee that is both complex and vibrant.
This lot undergoes an innovative double fermentation process: after harvesting, cherries ferment for 36–48 hours before being pulped, then undergo an additional 50–60 hours of fermentation in tanks. During this stage, the coffee is continuously agitated to maintain even fermentation and avoid overheating, which helps preserve clean, nuanced flavors. Afterward, the beans are washed and sun-dried on patios for 15–20 days, allowing the coffee’s natural sugars and aromatic complexity to fully develop.
The result is a cup with clarity, body, and expressive flavor, showcasing the potential of Pacamara to deliver balanced acidity, sweetness, and layered fruit and floral notes.
