Mexico Oaxaca San Pedro Sochiapam Washed
Located high in Oaxaca’s La Cañada province (1,700–1,900 MASL), San Pedro Sochiapam is a remote, heavily wooded community uniquely sustained by a multi-generational population of smallholder farmers. Thanks to strong local infrastructure, younger producers have stayed in the region and recently spearheaded a shift from volume based farming to specialty quality sourcing. Cultivating varieties like Pluma, Typica, Bourbon, and Mundo Novo on small 1 to 2-hectare plots, these farmers now utilize meticulous processing methods including selective harvesting, 18 to 24-hour fermentation in traditional wooden tanks, and 6 to 10 days of rooftop drying to produce an exceptional washed coffee.
