Ki-Saya” comes from two words in the local Mayan language: Ki, meaning “tasty,” and Saayab, meaning “nature.” It’s a fitting name for this organic coffee grown in the lush highlands of Chiapas, one of Mexico’s most celebrated coffee regions.

Coffee has deep roots in Chiapas — a vital crop for smallholder producers, nearly half of whom are Indigenous (mostly Tzotzil and Tzeltal communities). These farmers handpick only the ripest cherries, which are then fermented for 12–17 hours, washed, and sun-dried on small patios beside their homes. The result is a clean, balanced cup that reflects both craft and tradition.
